Fresh Périgord Black Truffles
Tuber Melanosporum Vitt.

Season: December – March

Experience the unparalleled allure of Fresh Périgord Black Truffles, revered for their rich aroma, complex flavor, and luxurious texture. Native to the Mediterranean regions of France, Italy, Croatia, Serbia, and northern Spain, these prized truffles flourish at elevations between 250m and 1000m. Their season peaks from late December through March, contingent on the summer rains of July and August that nurture their growth.

In the European winter and early spring, these culinary gems are meticulously foraged in the mist-laden woodlands of France’s Périgord Noir. Guided by skilled hunters and their trained dogs, each truffle is unearthed with care, selected for its exquisite fragrance and maturity. When freshly harvested, black truffles resemble lumps of charcoal, with sizes ranging from that of a raisin to as large as an orange, though exceptional specimens occasionally surpass this.

The exterior is ink-black with a subtle reddish hue—an indication of ripeness—while the freshly washed surface reveals a pattern of tiny, pyramid-shaped facets, often likened to freshly cut diamonds. Inside, the truffle’s deep chocolate-colored flesh is intricately marbled with caramel-hued veins, exuding a silky texture and a captivating aroma that defines gourmet cuisine.

During the European summer months, equally exceptional black truffles are sourced from the fertile regions of Chile and Australia, ensuring year-round availability without compromising quality.

For the finest culinary experience, enjoy fresh black truffles as soon as possible after purchase, allowing their rich, earthy aroma and sophisticated flavor to elevate your dishes to new heights.
